Cocktail of the Month

The Brûlée - By Ethan Lillard

The Brûlée was created to be more than a cocktail. It’s something you get to take part in. Inspired by the classic crème brûlée dessert, this winter special lets each guest “make” the drink themselves. It’s served with a spoon so you can crack through the caramel top before taking your first sip, just like the dessert that inspired it.

The base starts with a smooth, house-made custard mixed with vanilla bean–infused vodka and a touch of dark Jamaican rum for that deep molasses flavor. It’s creamy, rich, and warm. The kind of drink that feels right for cold nights and cozy corners.

The garnish is made from dried vanilla pods blended with sugar, boiled into a brittle caramel, then crushed into a powder and torched to form a thin, glassy layer on top. As you stir and sip, the caramel slowly melts into the drink, adding sweetness with every taste. The Brûlée is meant to be cracked, shared, and savored. A small winter ritual in a glass.
